
This July I booked my 5th vacation to the Emerald Coast (Nicaragua). No surprise Nicaragua is one of my top favorite places to travel. This trip was short and sweet but beautiful none the less. Instead of doing the 2 hour drive to Tola from Managua we decided to charter a plane and it was so much better! I saved time and got the best views, including the over view of Volcano Masaya smoking!

On our second day we made the drive to Granada to take a panga out on the lake. I’ve talked more about lake Nicaragua and Mombacho Volcano here. This panga trip was better because we stopped by Monkey Island and the monkeys decided to give us the time of day.

The next few days were filled with laziness at the house and lots of yummy food. One in particular being baho, (b-ouw) a traditional Nicaraguan dish. Our chef prepared this delicious meal with so much love over a time span of 6 hours! This flavorful dish consists of chunks of beef, yuca, plantain, onions and spices boiled in a huge pot covered by banana leaves at the top. AMAZING!!…and yes there was lots of Gallo Pinto and mandarin juice.
